Thanos Hotels & Resorts is seeking to recruit a Sushi Chef for the Almyra Hotel.

Duties & Responsibilities
  • Ensure that culinary standards in the Sushi section are met at all times as determined by the F&B standards and policies of Thanos Hotels
  • Achieve daily tasks required by the operation and guidelines given by the Executive Chef   
  • Prepare sushi and sashimi as directed by the Executive Chef in order to exceed guest expectations
  • Be quality driven and critical of all aspects of the Food and Beverage operation in order to guarantee the highest level of creativity and productivity within the organization
  • Maintain reasonable stock levels and assist the Head Chef in ordering
  • Keep all sushi preparation and sushi bar areas clean at all times
  • To work in any area of the kitchen as and when directed to do so by the Executive Chef and or the Head Chef
  • Study and learn the cuisine of the Executive Chef
  • Follow the recipes in the recipe book to the closest detail
  • Ensure that MEP is ready on time and to the correct specifications
  • Be in control of the sushi section
  • Assist the Head Chef by training other chefs in the brigade on sushi and sashimi skills
  • Attend kitchen meetings as and when required
  • Study and understand the HACCP system employed at Thanos Hotels
  • Monitor HACCP systems (fridge temperature and cleaning records) in the sushi section on a daily basis
  • Fill in all relevant HACCP forms on a daily basis and take any necessary action in a proactive fashion in relation to any HACCP procedures
  • Report any problems or shortcomings in relation to the above to the Executive Chef immediately
  • Attend monthly HACCP meetings, as scheduled by the Executive Chef
 
Requirements
  • Minimum 5 years of proven experience in a similar position at a 5* Hotel
  • Degree in Culinary Arts or hospitality related qualification, will be considered as an advantage
  • Excellent knowledge of English.  Knowledge of Greek or any other language will be considered as an advantage
  • Pleasant, honest and friendly personality
  • Ability to work in a fast pace environment and cope under pressure
  • To be quality driven and critical of all aspects of the food and beverage operation in order to guarantee the highest level of creativity and productivity within the organization
  • Must be a caring personality that shows empathy and understanding
