Cheese Maker
Thanos Hotels & Resorts is seeking to recruit a Cheese Maker for the Anassa Hotel.
Job Role
To ensure that the production of local Cypriot cheeses and other dairy products meet the highest culinary standards as determined by the Executive Chef.
To carry out daily tasks required by the operation and meet the guidelines set by Thanos Hotels
Duties & Responsibilities
Ensure the hotel maintains an outstanding reputation for its artisanal cheese products.
Follow traditional and modern recipes for cheese-making and maintain proper documentation for consistency, safety and quality.
Oversee the preparation, fermentation, and aging processes to produce high-quality cheeses.
Monitor the quality of raw ingredients, ensuring freshness and adherence to specifications.
Maintain cleanliness and hygiene in all cheese production areas in line with health and safety regulations.
Manage inventory of cheese-making supplies and coordinate with chef de partie and sous chefs for timely restocking.
Control waste and optimize the use of ingredients to align with cost management goals.
Requirements
Knowledge and experience in cheese-making or a desire and willingness to learn in our kitchens.
Understanding of traditional Cypriot cheeses such as halloumi, Anari and Haliji, also sweets and shoushouko
Good communication skills
Ability to work in a fast-paced environment and adapt under pressure.
Team player and enthusiastic to learn and evolve
